Nominator's project description

Food microstructure is one of the emerging fields of research in food science. Professor Aguilera has been one of the top researchers worldwide, who had an extremely high impact on this developing research area. His international reputation in food microstructure engineering through matrix and process design is outstanding. He received a great number of research awards and has been honoured through many fellwoships of very selective research societies. His book 'Microstructural Principles of Food Processing and Engineering', published by Elsevier in 1990, belongs to the most important text books in the field. His international publications enjoy a high impact and he is a highly regarded colleague and advisor for both researchers and research driven departments of the major food industries. The links of Professor Aguilera of the Insitute for Food Process Engineering and Dairy Technology have always been extremley fruitful. The award will contribute to explore new directions for food nano- and microstructure design and analysis at the Technische Universität München in Freising-Weihenstephan.
